Chocolate Frozen Yogurt Bites

Ingredients

Frozen Yogurt Bites

  • ½ cup yogurt We used plain Greek yogurt (please see the notes below for natural ways to sweeten yogurt) or plant based yogurt of choice.
  • ½ cup strawberries chopped finely or substitute with fresh or frozen fruit of choice

Chocolate Magic Shell

  • 4 tablespoons coconut oil melted
  • 2 tablespoons honey or maple syrup to keep vegan
  • 4 tablespoons unsweetened cocoa powder

Instructions

Frozen Yogurt Bites

  • If you are using PLAIN Greek yogurt, please see the notes below for suggestions on how to sweeten yogurt naturally. Stir together prepared yogurt and chopped fruit in a medium bowl.
  • Line large plate or small baking sheet with parchment paper. (This recipe makes 5 large frozen treats that can be frozen on large dinner plate which can easily fit in a side by side refrigerator.)
  • Use an ice cream scooper or large spoon to add 5 dollops of the prepared yogurt with fruit mixture on the parchment lined plate or tray. Make sure the clusters are not touching each other so they freeze evenly. Freeze uncovered for 2 hours or until frozen solid.
  • Remove the frozen yogurt and fruit clusters from the freezer.  They will stick to the plate when you first take them out of the freezer. Allow them to sit at room temperature for 5 minutes while you mix the chocolate magic shell. Then, they will lift easily.

Chocolate Magic Shell

  • In a medium bowl, add in the melted coconut oil, honey or maple syrup and unsweetened cocoa powder. Still until well dissolved.
  • Dip the frozen yogurt bites into the magic chocolate shell sauce. Flip over and make sure that all side are covered in the chocolate shell. (If you want to add sprinkles or toppings, do this immediately) Repeat with the remaining yogurt pieces. Place the chocolate covered frozen yogurt bites back on the parchment line plate to dry. (If your home is humid, place the tray back in the freezer for 5 minutes for the shell to harden.)
  • To Store: Place the chocolate dipped treats in a freezer safe sealed container and store in the freezer for up to 3 months.
  • To Enjoy: Bring a few of the little treats out on a dish and leave them alone at room temperature for 5-10 minutes, just so that the inside yogurt is creamy and delicious.

Notes

How to Naturally Sweeten Plain Greek Yogurt?
If you want to sweeten plain Greek yogurt naturally, consider adding one or two of these items to ½ cup of yogurt.
  • ¼ mashed ripe banana
  •  2 tablespoons unsweetened applesauce
  • ¼ tablespoon date paste
  • ¼ teaspoon of cinnamon
  • ¼ teaspoon of vanilla, almond, lemon, orange, pandan or other extracts
  • ½ tablespoon of coffee sauce
  • Peanut butter or pumpkin seed butter
  • 1 teaspoons of maple syrup or honey with ½ teaspoon of vanilla extract
Recipe Tips
  • The chocolate magic shell may start to get grainy if the coconut oil starts to cool and harden. Microwave the chocolate sauce for 5 to 10 seconds to get it back to a liquid state.
  • Add any toppings (finely chopped nuts or seeds, sprinkles etc.) quickly after you dip the yogurt bites. The magic shell dries fast!
  • Directly out of the freezer these little treats are a little too hard to bite into. However, after about 10 minutes at room temperature they were perfect with a nice crisp chocolate shell and a smooth creamy frozen center.
