Healthy Chicken Recipe
You are going to love this fresh Rosemary Chicken topped with loads of caramelized onions on top. The chicken is ultra tender and that pan sauce is super flavorful. But that's not all. This easy chicken recipe is gluten-free, dairy-free, cardiac friendly, low-carb, diabetic friendly and simply delicious.
Fresh Herbs
I have been having loads of fun growing my own fresh herbs here in the kitchen. My kitchen window seal is decorated with fresh rosemary, thyme, basil, parsley, Thai basil, mint, and of course my dear bonsai and lucky bamboo plant too.
Growing your own herb garden is so easy to do and it is convenient having them right there in my kitchen. Adding fresh herbs to your dishes, takes dishes like our rosemary pork chops from "ho hum" to "out of this world" as they are vibrant and so aromatic.
I do not have a green thumb and am actually shocked that I have not killed any of my herbs yet. (smiling) I just try to keep them watered daily and they are accidentally doing well.
So do you think this plate of Rosemary Chicken with Sautéed Onion Wine Sauce would be safe here with Buddy, while I go fetch myself a glass of wine? Hmmmm?
Green Thumbs
I have found that growing herbs from a seedling is far easier to do than planting it from seeds and nurturing them to a sturdy plant. I am impatient and want to use my herbs on a daily basis. If we have extra, we like to dry them or use them in herb butter.
You can buy fresh herbs here in the grocery store pre-sealed in a container and I found that the herbs in plants are only a few cents more and will get tons more product from them so it is penny wise as well. See if I can actually grow things, so can you!
6 Main Ingredients
- Chicken tenderloins - They are so easy to prepare and they cook up in no time at all making this an easy weeknight meal. However, you can also use boneless skinless chicken thighs or chicken cutlets like we did for our mushroom chicken with brandy sauce recipe.
- Rosemary - Fresh is preferred but you can also substitute with dried.
- Onions
- White Wine
- Chicken Broth - we used a gluten free one
- Butter - or plant based butter alternative of choice to stay lactose free.
Heathy Eating
Our family tries to eat relatively healthy which means loads of chicken, fish and vegan recipes. Sometimes boredom sets in we need to really change things up a bit to make boneless and skinless chicken exciting again.
A simple and very economical way to change-up your chicken breasts it to add naturally sweet and delicious caramelized or grilled onions on top of your chicken and with a simple wine sauce just makes this simple Rosemary Chicken with Sautéed Onion Wine Sauce lip smacking good.
How to Serve?
I served this delicious Rosemary Chicken with Sautéed Onion Wine Sauce meal with a lovely heirloom tomato and cucumber salad and stir fried green beans. Low carb and beautiful!

Rosemary Chicken with Sautéed Onion Wine Sauce
Ingredients
- 8 chicken tenderloins
or chicken cutlets - 2 teaspoons rosemary
fresh chopped finely (1 teaspoon for chicken and 1 teaspoon for the onions) - salt and pepper to taste
- 1 tablespoon olive oil
- 2 large onions
peeled and sliced into rings - ½ cup white wine
dry - ¾ cup chicken broth gluten free
- 1 tablespoon margarine/butter (I used dairy free margarine)
Instructions
- Sprinkle chicken tenderloins with 1 teaspoon of chopped rosemary and salt and pepper on both sides. Place olive oil in skillet and heat up to medium heat and cook chicken tenderloins about 3-4 minutes per side or until juices run clear. Remove chicken from pan and keep warm. (DO NOT WASH THE PAN)
- Add the sliced onions to the pan and add 1 teaspoon of rosemary and salt and pepper to taste. Saute onions until slightly golden brown but still have a nice little aldente crunch about 5-8 minutes. Remove onions from the pan and keep warm.
- Add white to pan and deglaze pan for about 2 minutes to allow the alcohol to burn off. Add the chicken broth to the wine sauce and allow to reduce sauce to reduce by half. Check and adjust seasoning. Add the cooked chicken and onion back to pan to rewarm and then add margarine/butter to the pan and remove from the heat. Stir to melt the margarine/butter.
- Serve Rosemary Chicken with Caramelized Onion Sauce on a plate with chicken on the bottom mounded on top with onions and drizzled on top with the wine sauce. Enjoy!

I've been thinking about growing fresh herbs on my balcony!! I might have to just go buy some tiny plants and watch them grow. I'm the hugest fan of sauteed onions and I love how you layered so many of them on the chicken!
Healthy World Cuisine says
Hi there Lisa! I am so glad I have inspired you to grow some little herbs on your balcony. It is so nice to at any time just snip a little fresh herbs and throw it into whatever you are making.
Jasline @ Foodie Baker says
This looks so amazing and delicious! I never knew mint was so easy to grow! I'll definitely have to try it out. I also have wild rosemary growing near my apartment, time to nip some to make this chicken 😉
Healthy World Cuisine says
Hi there Jasline and thank you! How is your unpacking going? I know that about 90 percent of the shipment was kitchen supplies.. LOL If you find a wet market in your new location you really have to try the mint idea as it growing like crazy just in the glass of water.

Fresh, homegrown herbs are the best! It's funny, but I can grow anything outside - but give me an indoor plant and somehow I manage to kill it!
Love your pairing of caramelized onions, wine, rosemary and chicken! Just exquisite!

What a fantastic entree! Looks impressive.

Is the lucky bamboo working?? If I go by this dish, it certainly is! This is totally my type of food. Packed full of flavour but so simple to make. I love the idea of your window sill herb garden! That's all you need 🙂
Healthy World Cuisine says
Thank you Nagi! Do you have a little lucky bamboo? I am certain they bring you much good luck to your recipes and dishes. You must have one as your dishes are amazing!

Bam - this looks so good and I do love how this meal would suit everyone in the family - carb-free, dairy-free, gluten-free etc. I will make this tonight. I have all the ingredients and like you, I'm growing the rosemary in my garden. Thanks for the inspiration and I love the photo with your dog! xx
Healthy World Cuisine says
Thank you Charlie, this dish does check many boxes for pleasing my whole family and all of their dietary needs. Do you sweet girls (dogs) get into all of the photos too? Whenever you take photos of them they are just looking all sweet and innocent.

One herb that I can always count on is rosemary... it's the bush that divide our house with neighbor's and they let me use rosemary any time I want (and I don't have to take care of it). It's the best thing! 😀 Love the soft and caramelized onions and I can imagine the amazing flavor from your photos! 😉
Healthy World Cuisine says
What fabulous neighbours you have! Caramelised onions are slightly sweet and delicious and really make this dish sing. I have not had a "garden" since we lived in the States. No grass to cut, no weeds to trim-It has been blissful. However, I do really miss the feel of soft grass under my feet.
jothetartqueen says
Hi Bam..this sounds really lovely. I especially like the caramelised onions bit. Delicious!
I think you are doing more than just fine with your herbs..looks like you have quite the herb garden going on.
Healthy World Cuisine says
Hello Jo, thank you. I really want to expand my herb garden but need a bigger kitchen space. Have a super week.
Tandy | Lavender and Lime says
There is something so satisfying about using home grown herbs to cook with. Well done on getting them to grow Bobbi 🙂
Healthy World Cuisine says
I bet you have plenty of lavender growing at your place...!!! Do you grow your own too?
The Foodie Affair says
This dish looks fantastic and no, I wouldn't leave your plate in front of your little angel. That would be just too tempting! haha! Right now I only have a small sprigs of basil, but lots of mint! I'm terrible with keeping my herbs happy.
Healthy World Cuisine says
LOL... Angel is not actually the word I would have used to describe Buddy on the day of my photo shoot. I had plenty of great photos unfortunately all with a little brown nose and paws in them, too. Maybe we need to talk to our plants or something...? you know to help them feel loved...LOL My basil plant is now bald as I have made far too many pestos without adequate amount of regrowth periods in between. Ah, live and learn... Wishing you a super week.
Dawn says
This is exactly what I am going to make for dinner tonight - I might add in a little mustard at the end also - thanks so much BAM!
Healthy World Cuisine says
Dawn adding a little mustard at the end, like a little creamy dijon sounds like a winner. Let me know how it turns out.
Karista says
What a delicious looking dish! I adore both onions and rosemary and they pair so well with chicken. I am now very hungry!
Healthy World Cuisine says
Thank you Karista! I thought of you, the little sauce guru, the whole time I was making this dish!
Abbe@This is How I Cook says
I love growing herbs probably because they are so hard to kill. I also love this glorious chicken. Slathered with onions and rosemary this is making my mouth water and it is only breakfast.
Healthy World Cuisine says
Herbs must be super hearty because there are lasting under the wrath of BAM... LOL I really do this love this dish as it is so simple and a snap to throw together.
