Healthy Chicken Recipe
You are going to love this fresh Rosemary Chicken topped with loads of caramelized onions on top. The chicken is ultra tender and that pan sauce is super flavorful. But that's not all. This easy chicken recipe is gluten-free, dairy-free, cardiac friendly, low-carb, diabetic friendly and simply delicious.
Fresh Herbs
I have been having loads of fun growing my own fresh herbs here in the kitchen. My kitchen window seal is decorated with fresh rosemary, thyme, basil, parsley, Thai basil, mint, and of course my dear bonsai and lucky bamboo plant too.
Growing your own herb garden is so easy to do and it is convenient having them right there in my kitchen. Adding fresh herbs to your dishes, takes dishes like our rosemary pork chops from "ho hum" to "out of this world" as they are vibrant and so aromatic.
I do not have a green thumb and am actually shocked that I have not killed any of my herbs yet. (smiling) I just try to keep them watered daily and they are accidentally doing well.
So do you think this plate of Rosemary Chicken with Sautéed Onion Wine Sauce would be safe here with Buddy, while I go fetch myself a glass of wine? Hmmmm?
Green Thumbs
I have found that growing herbs from a seedling is far easier to do than planting it from seeds and nurturing them to a sturdy plant. I am impatient and want to use my herbs on a daily basis. If we have extra, we like to dry them or use them in herb butter.
You can buy fresh herbs here in the grocery store pre-sealed in a container and I found that the herbs in plants are only a few cents more and will get tons more product from them so it is penny wise as well. See if I can actually grow things, so can you!
6 Main Ingredients
- Chicken tenderloins - They are so easy to prepare and they cook up in no time at all making this an easy weeknight meal. However, you can also use boneless skinless chicken thighs or chicken cutlets like we did for our mushroom chicken with brandy sauce recipe.
- Rosemary - Fresh is preferred but you can also substitute with dried.
- Onions
- White Wine
- Chicken Broth - we used a gluten free one
- Butter - or plant based butter alternative of choice to stay lactose free.
Heathy Eating
Our family tries to eat relatively healthy which means loads of chicken, fish and vegan recipes. Sometimes boredom sets in we need to really change things up a bit to make boneless and skinless chicken exciting again.
A simple and very economical way to change-up your chicken breasts it to add naturally sweet and delicious caramelized or grilled onions on top of your chicken and with a simple wine sauce just makes this simple Rosemary Chicken with Sautéed Onion Wine Sauce lip smacking good.
How to Serve?
I served this delicious Rosemary Chicken with Sautéed Onion Wine Sauce meal with a lovely heirloom tomato and cucumber salad and stir fried green beans. Low carb and beautiful!

Rosemary Chicken with Sautéed Onion Wine Sauce
Ingredients
- 8 chicken tenderloins
or chicken cutlets - 2 teaspoons rosemary
fresh chopped finely (1 teaspoon for chicken and 1 teaspoon for the onions) - salt and pepper to taste
- 1 tablespoon olive oil
- 2 large onions
peeled and sliced into rings - ½ cup white wine
dry - ¾ cup chicken broth gluten free
- 1 tablespoon margarine/butter (I used dairy free margarine)
Instructions
- Sprinkle chicken tenderloins with 1 teaspoon of chopped rosemary and salt and pepper on both sides. Place olive oil in skillet and heat up to medium heat and cook chicken tenderloins about 3-4 minutes per side or until juices run clear. Remove chicken from pan and keep warm. (DO NOT WASH THE PAN)
- Add the sliced onions to the pan and add 1 teaspoon of rosemary and salt and pepper to taste. Saute onions until slightly golden brown but still have a nice little aldente crunch about 5-8 minutes. Remove onions from the pan and keep warm.
- Add white to pan and deglaze pan for about 2 minutes to allow the alcohol to burn off. Add the chicken broth to the wine sauce and allow to reduce sauce to reduce by half. Check and adjust seasoning. Add the cooked chicken and onion back to pan to rewarm and then add margarine/butter to the pan and remove from the heat. Stir to melt the margarine/butter.
- Serve Rosemary Chicken with Caramelized Onion Sauce on a plate with chicken on the bottom mounded on top with onions and drizzled on top with the wine sauce. Enjoy!

Dear BAM,
Your chicken look divine with the brown gravy and onions. Fresh herbs from the garden into the cooking pot is most satisfying.
Healthy World Cuisine says
Thank you Chop in my Saucepan. I bet your kitchen is adorned with fresh herbs too. You guys are always making the most stunning dishes.
Raymund says
Wow that pooch is so adorable, I am him I will devour that delicious plate in front of me
Healthy World Cuisine says
Thank you Raymund. Hey guess what I made this week? Your chicken adobo recipe and it was fantastic. Hubby says to add it to the rotational list!

Rosemary and chicken are the perfect marriage and throw in some caramelized onions and you have perfection. What a beautiful dish, Bobbi, and what an obedient Buddy, lol. He's so darn cute! I am growing fresh herbs on my windowsill as well and usually I'm a disaster with indoor plants but I'm having a lot of success this winter. I like them so much better than the herbs in boxes because you can pick them fresh whenever you need them and don't have to time your dishes so that you cook them before the boxed ones go bad.
I bet the boys gobbled this dish down - so lovely!
Healthy World Cuisine says
Thanks so much Robyn. "Buddy" was being a little turkey during this photo shoot. I had loads of good photos but unfortunately all of them had little brown noses and paws in them.. LOL I swear I have a black thumb with plants too but most recently I have not killed a thing... I think we need to start talking to our plants so they feel loved, maybe this is what we are doing wrong.. LOL I am right with you love having the fresh herbs just an arm length away to snip in some fresh herbs any time I wish during the cooking process. I am making my rounds...slowly...visiting but coming around soon.

This sounds like the perfect dish for me–I love rosemary and all those sautéed onions! Will have to add this to my lunch and dinner board!
Healthy World Cuisine says
Thank you Nancy! I love Rosemary and onions together too it is like the perfect little marriage of flavours. Thanks for the pin dear!

Love growing my own herbs! Always have quite a few in our garden from spring until the first frost in fall. Usually transplant some and try to grow them in our kitchen window over winter, but they don't do that well when we have a particularly gloomy weather (as we did last year -- the rosemary died after a couple of months). Anyway, lovely recipe! Loads of flavor -- definitely my kind of dish. Thanks for this.

I wish we had a garden but it is only apartment living here in Hong Kong so having to make do with my balcony and kitchen window seal. I have found that plants and flowers do not do well outdoors here maybe because of the heat and pollution. However, we do have stunning sunsets because of that problem...
Allison - Main St. Cuisine says
This is a one-pan-wonder indeed! My rosemary plants are flourishing and I'm always looking for new dishes to use my favorite, woodsy herb in. This would make a perfect weeknight, post-baseball dinner for my family. 🙂
Healthy World Cuisine says
Oh yes, baseball season has begun for sure so I am sure you will be living in the dugouts and in your car for the next several months. The is a great less than 30 minute meal for starving boys.
Monica says
Looks amazing...I can practically smell it! I cannot keep even herbs alive for long but I'm going to try again...wish me luck! And it's so convenient to have a few basics on hand because they really do enhance a dish so much. Chicken hardly ever looks this good, BAM!
Healthy World Cuisine says
Thank you Monica! Back in the States I had completely given up on the whole idea of growing things while working full time and raising a family who is active in sports. There is just no time to do that whole watering thing. Thank goodness for those little fresh herbs in the plastic containers!
Gerlinde@sunnycovechef says
I have a tiny plot where I grow mostly herbs and some flowers. My favorite herb is tarragon. Your chicken dish looks delicious topped with tasty onions.
Healthy World Cuisine says
Gerlinde, now tarragon is one herb I do not have growing at the moment but just love that herb in dressings and in potato salad and in many dishes. Thanks for the reminder.
Amira says
This is a very simple and delish chicken dish ... chicken gets boring by time but this recipe introduces a new taste to me .. Beautiful rosemary springs. I like planting herbs but totally ruined mine this winter 🙁 may be I should try again.
Healthy World Cuisine says
Thanks Amira. This winter was very harsh but I am sure that you can grow your herbs again with your gentle hands.
Norma Chang says
Congratulations on you herb garden success, those rosemary sprigs are beautiful and your chicken dish is so simple not to mention healthy. Thanks for the mention,
Healthy World Cuisine says
You are most welcome Norma. Have you ever tried to grow lemongrass? I guess I am getting pretty bold now that I was able to keep my Thai basil alive for a couple of months and now want an herb that I use so much of...
Norma Chang says
Funny you should ask, I am rooting 3 stalks right now. Will post on my blog when I pot up. Very easy to grow, immerse a stalk in water and it will root in no time, once rooted pot up..
Healthy World Cuisine says
Really??!! That is so good to know Norma. I will try that with my next lemongrass purchase.
Eha says
Beautiful recipe of very much my favourite kind of food . . . . easy and quick to prepare to boot! Grow the same herbs as you in pots at the side of my cottage: the rosemary bush is about a metre high and the queen and supervisor who tells all the others to grow thicker and faster 🙂 !!
Healthy World Cuisine says
You are not the first or the last one to mention that rosemary grows big and huge so maybe all the more reason to trim her back by using up some of her freshness with my chicken dish. After all we do not want my rosemary plant hogging up all the good sunlight. LOL Plants just crack me up as you know how they turn and twist their bodies to be able to get some of that good sunlight.
Maureen | Orgasmic Chef says
That chicken doesn't look skinny to me at all. I would love to have this in front of me right now! I love growing herbs just outside the kitchen door. I too, start them from babies. It means I'm eating fresh herbs in a week rather than a month.
Healthy World Cuisine says
I think that your rosemary ought to stay with you during a mild Fall in Oz, right? I love fall it is my favorite time of the year and even though things are getting warm here will be happy to be reading your delightful fall dishes.
thehungrymum says
I have rosemary going wild in the garden - is about the only thing we haven't managed to kill. The Hungry Dad would love this.
Healthy World Cuisine says
You are too funny... You sound like me. Maybe you and I are going about this all wrong maybe we need to start talking to our plants so they feel loved... LOL
thehungrymum says
Ahhh, maybe that is the secret to a green thumb (rather than my brown thumb!)
thecompletebook says
Absolute winner Bam. Lovely fresh flavours and I think I shall bring in some pots from outside and get cracking with some herbs for the kitchen window sill.
Have a beautiful day. 🙂 xo
