You can use old-fashioned oats but expect a slight texture variation. This recipe has not been tested with steel cut oats.
Applesauce: Use unsweetened applesauce, but if you only have sweetened or cinnamon-flavored applesauce, it's a suitable substitute. You may also opt for apple butter.
Nut/Seed Butter: We used creamy, no added sugar peanut butter in this recipe because apples and peanut butter make a delightful combination. However, if there's a peanut allergy at home or school, consider using an alternative nut butter, or try our pumpkin seed butter.
Cinnamon: We used extra ground dried cinnamon in this date cookie recipe to amplify the flavors and aroma. You know I have always used a Martha recipe for sugar cookies as well but it's this one: http://www.marthastewart.com/342228/sugar-cookie-cutouts (it uses a lot more flour! And my 'trick' is to add a little milk at the end to make it smooth because that recipe tends to be on the dry side!). These are just beauties.
